BUTTER PECAN COOKIES

Finally, after many request, I got around to putting a baking post on my blog! I’m so happy that people actually want me to put my baking recipes up here because I absolutely love baking. Seriously, if I could get paid for baking treats all day in my kitchen, that would be my dream job. Especially with fall in the air, I feel like that’s when all my baking needs come out. So hopefully I can put up a baking post every couple of weeks!



For my first baking post, I decided to make the easiest cookies I could think of: butter pecan cookies. Seriously, I never made such an easy cookie before! After you make these, you’ll be thanking me because you will be making them all the time. So let’s get started!





Ingredients:

·         1 cup butter at room temperature (equals 2 sticks)
·         3/4 cup brown sugar (1/2 cup + 1/4 cup)
·         1 teaspoon vanilla
·         2 cups of flour
·         24 pecan halves
·         1 cup of crushed pecans

Instructions:

Step 1: Preheat your oven to 350 degrees.

Step 2: Cream together your room temperature butter and your brown sugar.





Step 3: After your butter and sugar mixture is combined and fluffy, slowly add your flour in the bowl and mix. I suggest adding half of the flour in two intervals. Combine until you can barely see any more flour.

Step 4: Add in your cup of crushed pecans and continue mixing till everything is combined.




Step 5: Roll out your cookie dough mixture into little balls onto two baking sheets. The dough mixture should make exactly 24 cookies. (btw, you do not need to grease your baking sheet because of all the butter we added into the cookies)





Step 6: Use your hands to press down and flatten out the cookies. After you flatten them out, add your pecan halves on the top of the cookies.




Step 7: Put your cookies in the oven and let them bake for 10-12 minutes. These cookies do not really darken or change colors, so watch them closely.

Step 8: After done baking, take them out the oven and let them rest for 5 minutes before transferring them onto a baking rack.
